OH CANADA COCKTAIL, EH?

As Canadians, we are generally fairly modest and low key when it comes to our patriotism.  That's not to say we don't love this vast country and all it has to offer, we just like to quietly appreciate it.  This year is Canada's 150th though so never has there been more talk about celebrating with fervor.  We here at Soulsnaxs are proud of our Canadian roots and can't let this opportunity to raise a glass in honour of our great country pass us by.  We invented this “Oh Canada Cocktail, EH?”  for just that reason.  A red and white slushy bevy that's perfect for this momentous occasion.  We added a splash of Three Olives Cake Vodka to help add to the birthday feel.  So, make a batch while at the cottage then recline in your Muskoka chair as you sit by the lake soaking in the fresh air watching the sun slowly sink into the horizon.  It's the perfectly Canadian way to spend a Canada Day long weekend.

Here's what you'll need:

 

For the Daiquiri

2 cups strawberries - frozen

2 cups ice cubes

4 oz Havana Club white rum

1/2 oz Strawberry simple syrup (recipe Below)

 

For the Whipped cream

1 cup heavy cream

2 tbsps powdered sugar

1/2 tsp pure vanilla extract

3/4 oz Three Olives Cake Vodka

 

For the Strawberry Simple Syrup

1 cup water

1 cup sugar

The top of the strawberries (green leaves and all)

(serves 4)

STAGE 1

Wash the strawberries then remove the tops (save them we'll need them in a minute) and quarter the berries.  Lay them flat onto a parchment lined tray and pop them into the freezer until they are frozen solid - about 2 hours.

STAGE 2

 

Put the sugar and water into a pot over high heat.  Bring to a boil then switch off the burner and add the tops of the strawberries. Cover and let steep until it’s completely cooled.  Once cooled strain out the strawberry tops then chill in the fridge.

 

STAGE 3

 

Add the whipping cream, vanilla, vodka and powdered sugar into a standing mixer. 

 

Turn the mixer on low then up the speed to medium and whip until fluffy and it holds soft peaks. 

 

Store in the fridge until ready to assemble the cocktails.

STAGE 4

 

Put the frozen strawberries, simple syrup and rum into the blender and pulse until smooth.  Then add the ice cubes and pulse until they are crushed.  Fill your glass 1/3 full with the daiquiri, 1/3 with the vodka whipped cream then fill the glass to the top with more daiquiri.  Add a festive red and white straw and enjoy!

TIPS

 

You can use already frozen strawberries from the freezer aisle if you’d prefer not to wait hours for them to freeze.  I recommend fresh especially because they are in season now but I get it sometimes convenience is king.

 

Three Olives Cake Vodka can be hard to come by so if you can’t get a hold of it you could also use any vanilla flavoured vodka.
